The recommended sugar to use for your cotton candy is any 100 percent pure cane or beet sugar. The regular granulated variety is ideal. You’ll want to avoid Extra Fine Granulated or Bottlers Fine, as these may contain machine-damaging cornstarch. Coarse, medium-coarse, or sanding sugar varieties may be used, but they require more voltage to be delivered to the machine head. You can also just take the guesswork out of it all and use premixed sugar, color, and flavorings specially designed for cotton candy machines.

When you’re ready to get started, moisten the inside of the floss pan to ensure the floss will stick well to the sides. Pay special attention to the direction of the floss as it leaves the floss head. You may also want to adjust the two floaters on top to get the floss spinning at the ideal angle. With just a little bit of practice, you’ll become an expert at rolling the floss onto the cone. Hold the cone at the pointed end and use a light flick-of-the-wrist motion to collect and build your web of floss. If the floss doesn’t stick well to the cone, try wiping the cone with a damp sponge. Once you’ve collected a section of floss onto the cone, lift the cone outside of the pan to rotate and wind the floss. Do not roll the floss onto the cone inside the floss pan.

When you’re finished creating your fluffy cones, make sure you run all the sugar out of the floss head. Once the machine is empty, turn the heat to the highest setting for one minute. This will remove carbon from the machine. A damp cloth may be used to wipe the machine clean, but never allow water to enter the floss head.
